Wild Rice and Chick’n Salad

In a large bowl, combine the chick’n strips, rice, water chestnuts and green onions.  In a small bowl, combine mayonnaise, milk, lemon juice, tarragon and pepper.  Pour over chick’n mixture; toss to coat.  Cover and refrigerate for 2-3 hours, just before serving, fold in grapes and sprinkle with cashews.

3 c. cooked wild rice
1 can (8 oz.) sliced water chestnuts, drained
1/3 c. green onions, sliced thin
2/3 c. reduced fat mayonnaise
1/3 c. fat free milk
2 to 3 tbsp. lemon juice
¼ tsp. dried tarragon
1/8 tsp. black pepper
1 c. halved seedless red grapes
½ c. cashew halves
