Vegetarian Gravy

Melt margarine in a skillet over medium heat. Using a whisk, slowly add flour to melted butter and stir.  Slowly add vegetable broth while whisking until mixture becomes smooth.  Add minced onion and soy sauce. Bring to a low boil.  Add poultry seasoning and salt and pepper to taste. Simmer for 5 minutes, stirring regularly.

Optional: Add 3/4 cup sliced sautéed mushroom for extra flavor!

Ingredients

1 small onion, minced
1/4 cup vegan margarine
2 1/2 cups vegetable broth
1 tbsp soy sauce
1/4 cup flour
1/2 tsp of poultry seasoning
Salt and pepper to taste
