Wild Rice Soup with Bacon

Ingredients:


5 slices Smart Bacon®
1/2 c raw wild rice
2 c water
1/4 c butter
2 Tbsp chopped onion
1/3 c all-purpose flour
3 c vegetable broth/stock
1/2 c shredded carrot
1/4 c sliced almonds
1/4 tsp freshly cracked pepper
1 c fat-free half and half
chopped fresh parsley

Wash wild rice thoroughly. In medium saucepan place ½ cup wild rice and 2 cups water; bring to a boil over high heat. Reduce heat to medium low and cook covered 35 to 40 minutes or until rice is tender. Remove from heat; fluff with a fork. Set aside.

In Dutch oven melt butter. Add onion. Cook and stir until onion softens (3 to 4 minutes).

Add flour; continue cooking, stirring frequently for 1 minute.

Add vegetable broth; continue cooking, stirring frequently, until mixture is smooth (2 to 3 minutes).

Add wild rice, carrot, crumbled Smart Bacon, almonds and pepper. Continue cooking, stirring frequently, until mixture is hot (4 to 5 minutes).

Add 1/2 and 1/3. Continue cooking, stirring frequently until mixture is heated through.

Serve immediately with a sprinkle of parsley.

Refrigerate leftovers.
