Vegetarian Gravy

Ingredients:
| 1 small onion | | 1/4 c vegan margarine | | 2 1/2 c vegetable broth | | 1 Tbsp soy sauce | | 1/4 c flour | | 1/2 tsp poultry seasoning | | 1 salt and pepper to taste |
Melt margarine in a skillet over medium heat. Using a whisk, slowly add flour to melted butter and stir. Slowly add vegetable broth while whisking until mixture becomes smooth. Add minced onion and soy sauce. Bring to a low boil. Add poultry seasoning and salt and pepper to taste. Simmer for 5 minutes, stirring regularly.
Optional: Add 3/4 cup sliced sautéed mushroom for extra flavor.
