Thai Fried Rice with Smart Deli® Ham and Three Grain Tempeh

Serving Amount: 8 servings
Ingredients:
| 1 pkg (8 oz) Organic Three Grain Tempeh, cut into 1/4-inch cubes | | 1 pkg (5.5 oz) Smart Deli® Ham, diced | | 1 can (20 oz) pineapple chunks in juice | | 3 tablespoons reduced sodium soy sauce, divided | | 3-4 tablespoons peanut oil | | 3 eggs (optional) | | 2 cups cooked brown rice | | 4 green onions, chopped | | 1/2 cup cashews, coarsely chopped |
Drain pineapple juice into a medium bowl. Add 1 tablespoon soy sauce. Add tempeh; marinate at least 3 hours. Drain tempeh, reserving marinade.
In a wok, heat 2 tablespoons oil over high heat. Add tempeh; cook 4 minutes, stirring frequently, until browned on all sides.
If using eggs, while tempeh is cooking, in a small sauté pan, heat 1 tablespoon oil over medium-high heat. Beat eggs lightly; add to sauté pan and lightly scramble. Remove from heat.
Add ham to wok and cook 1 minute, stirring frequently. Add rice and cook 3 minutes, stirring frequently. Add eggs, green onions, cashews, pineapple and 2 tablespoons soy sauce. Cook for 2 minutes; add reserved marinade. Cook 2 minutes more or until marinade is absorbed.
