Thai Fried Rice with Smart Deli® Ham and Three Grain Tempeh

|1 package (8 oz) Lightlife®Organic Three Grain Tempeh, cut into 1/4-inch cubes|
|1 package (5.5 oz) Lightlife® Smart Deli® Ham, diced|
|1 can (20 oz) pineapple chunks in juice|
|3 Tbsp. reduced-sodium soy sauce, divided|
|3 Tbsp. peanut oil|
|3 eggs (optional)|
|2 cups cooked brown rice|
|4 chopped green onions|
|1/2 cup unsalted cashews, coarsely chopped|
Drain pineapple juice into a medium bowl. Add 1 tablespoon of soy sauce. Add tempeh; marinate at least 3 hours. Drain tempeh, reserving marinade.
In a wok, heat 2 tablespoons of oil over high heat. Add tempeh; cook 4 minutes, stirring frequently, until browned on all sides.
If using eggs, while tempeh is cooking, in a small sauté pan heat remaining 1 tablespoon of oil over medium-high heat. Beat eggs lightly; add to sauté pan and lightly scramble. Remove from heat.
Add Smart Deli® Ham to wok and cook 1 minute, stirring frequently. Add rice and cook 3 minutes, stirring frequently. Add eggs, green onions, cashews, pineapple and remaining 2 tablespoons of soy sauce. Cook for 2 minutes; add reserved marinade. Cook 2 minutes more or until marinade is absorbed.
