Thai Curry with Smart Strips® Chick'n and Vegetables
Serving Amount: 4 servings
Ingredients:
| 1 pkg (6oz) Smart Strips® Chick'n | | 1 can (14oz) light coconut milk | | 1/4 cup vegetable broth | | 2-4 tablespoons Thai green curry paste, to taste | | 2 tablespoons reduced-sodium soy sauce | | 2 tablespoons brown sugar | | 1 pkg (10oz) frozen stir-fry vegetables | | 1/4 cup chopped Thai or Italian basil | | 4 cups cooked jasmine rice |
In a saucepan, whisk together coconut milk, broth, curry paste, soy sauce and brown sugar. Bring to a boil over medium heat; reduce heat and simmer 15 minutes or until slightly thickened.
Add vegetables and Smart Strips; simmer 10 minutes or until Smart Strips® and vegetables are heated through. Stir in basil. Serve over cooked jasmine rice.
