Taco Salad with Fakin' Bacon and Smart Ground® Mexican

Ingredients:


1 pkg (6oz) Smoky Tempeh Strips, chopped
1 pkg (12 oz) Smart Ground® Mexican
2 tablespoons vegetable oil
1 head romaine lettuce, wash and cut
1/2 cup cooked black beans
1 large tomato, chopped
1 ripe avocado, cut into small chunks
1 cup vegan cheese, shredded
4 or 5 tortilla chips, optional
1/2 cup vegan mayonnaise
1/2 cup vegan sour cream
1/2 cup salsa
3 tablespoons lime juice
2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon minced chipotle chile en adobo

In a skillet, heat oil over medium high heat. Add tempeh and cook for 4 minutes, stirring frequently. Remove tempeh and add Smart Ground to skillet. Cook for 3 minutes, stirring frequently to break up. In a large salad bowl, toss lettuce with dressing. Top with black beans, tomato, avocado, cheese, tempeh and Smart Ground. If desired, crumble tortilla chips on top of the salad. Whisk last seven ingredients together for dressing.
