Catalan-Style Spinach with Sweet and Sour Cutlets

Ingredients:


1 package (10.4 oz) Lightlife® Smart Cutlets® Spicy Sweet & Sour
1 Tbsp. extra virgin olive oil
3 Tbsp. extra virgin olive oil
1/2 cup dried craisins
1/3 cup pine nuts
3 cups baby spinach leaves, cleaned and dried (about 5 ounces)
1/4 tsp. salt
1/8 tsp. freshly cracked pepper
dash or two cayenne pepper

In Dutch oven place 1 tablespoon of olive oil. Add Smart Cutlets® (without the marinade). Cook over medium heat until lightly browned (1-2 mins.); turn over and continue cooking, until lightly browned (1-2 mins.). Remove from pan, cut into strips; keep warm.

In same pan, place 3 tablespoons of olive oil. Add craisins and pine nuts. Cook over medium heat, stirring frequently, until pine nuts are lightly browned and craisins are puffy (2-3 mins.).

Add spinach leaves, salt, pepper and Cayenne pepper. Continue cooking, stirring frequently, until spinach is just wilted (1-2 mins.).

Place spinach mixture on plate and top with Smart Cutlet® strips.

Refrigerate leftovers.
