Catalan -Style Spinach with Sweet and Sour Cutlets

Ingredients:


1 pkg Smart Cutlets® Spicy Sweet & Sour
1 Tbsp extra virgin olive oil
3 Tbsp extra virgin olive oil
1/2 c dried craisins
1/3 c pine nuts
3 c baby spinach leaves, cleaned and dried (about 5 ounces)
1/4 tsp salt
1/8 tsp freshly cracked pepper
Dash or two cayenne pepper

In Dutch oven place 1 tablespoon olive oil. Add cutlets (without the marinade). Cook over medium heat until lightly browned (1 to 2 minutes); turn over and continue cooking, until lightly browned (1 to 2 minutes). Remove from pan, cut into strips; keep warm.

In same pan, place 3 tablespoons olive oil. Add craisins and pine nuts. Cook over medium heat, stirring frequently, until pine nuts are lightly browned and craisins are puffy (2 to 3 minutes).

Add spinach leaves, salt, pepper, and cayenne pepper. Continue cooking, stirring frequently, until spinach is just wilted (1 to 2 minutes).

Place spinach mixture on plate and top with cutlet strips.

Refrigerate leftovers.
