Spring Pasta with Smart Bacon®

6 servings (1/6th recipe each)

Ingredients:


1 pkg (16 oz each) dry rotini pasta, uncooked
1 pkg (5 oz each) Lightlife® Smart Bacon®
1/2 cup frozen green peas
1 green onions
1 cup morel mushrooms
1/4 cup olive oil
2 tablespoons garlic
1/4 teaspoon salt
1/2 cup shredded Parmesan cheese

In large sauté pan, heat 2 tablespoons of olive oil over medium heat. When hot, add onions and stir every minute or so. After 3 minutes, add mushrooms, Smart Bacon® and garlic. After five minutes, add peas and remaining olive oil. Add pasta and salt (to taste). Sprinkle with parmesan and serve immediately.
