Spring Pasta with Smart Bacon®

Ingredients:


1 package (5 oz) Lightlife® Smart Bacon®, diced
1 package (16 oz) dry rotini pasta, uncooked
1/4 cup olive oil, divided
1/2 cup sliced green onions
1 cup chopped morel mushrooms
2 Tbsp. finely chopped garlic
1/2 cup frozen green peas
1/4 tsp. salt
1/2 cup shredded Parmesan cheese

Cook pasta according to package directions.

Meanwhile, in large sauté pan, heat 2 tablespoons of olive oil over medium heat. When hot, add onions and stir every minute or so. After 2 minutes, add mushrooms, Smart Bacon® and garlic. After 5 minutes, add peas and remaining olive oil. Add pasta and salt. Sprinkle with Parmesan and serve immediately.
