Smart Strips® Chick'n Noodle Soup

Serving Amount: 8 servings
Ingredients:
| 1 pkg (6oz) Smart Strips® Chick'n, cut into 1/2-inch pieces | | 1/4 cup plus 2 tablespoons vegetable oil | | 1 cup onion, diced | | 2 cups carrots, cut into 1/4-inch slices | | 3 quarts low-sodium vegetable broth | | 2 bay leaves | | 1 tablespoon onion powder | | 1 tablespoon garlic powder | | 7 oz whole wheat thin spaghetti, broken into 2-inch pieces |
In a large soup pot, heat 1/4 cup oil over medium-high heat. Add onion and carrots; sauté for 10 minutes. While vegetables are cooking, in a skillet, heat 2 tablespoons oil over medium-high heat. Add Smart Strips and sauté for 2 minutes, stirring occasionally.
Add broth, bay leaves, onion powder and garlic powder to soup pot. Bring to a boil; reduce heat and simmer for 10 minutes. Add spaghetti and Smart Strips and bring to a boil. Reduce heat and simmer for 15 minutes. Remove bay leaves before serving.
