Roasted Vegetables with Smart Sausages®

|4 links Lightlife® Smart Sausages® Italian Style or Chorizo Style, (or both)|
|1 large onion, chopped into large pieces |
|1 Portobello mushroom, or several smaller ones, chopped into large pieces|
|1 large tomato, chopped into large pieces |
|1 green or red bell pepper, chopped into large pieces|
|1 head red cabbage (will turn blue when cooked), chopped into large pieces|
|2 carrots, cut into bite sized pieces |
|2 Tbsp. olive oil|
|1/2 tsp. salt|
|1/4 tsp. ground black pepper|
Preheat oven to 400°F.
Cut the Smart Sausages® into bite-sized pieces and line them in the bottom of a roasting pan. Cover with chopped veggies and sprinkle all with olive oil, salt and pepper.
Bake for 30-40 mins., stirring every 10-15 mins.; the mushrooms and tomatoes will make it juicy. This dish is delicious served hot over brown rice with a crusty baguette, if desired.
