Smart Ground® Shepherd's Pie

Ingredients:


1 pkg (12oz) Smart Ground® Original
2 tablespoons vegetable oil, divided
3/4 cup carrots, diced
3/4 cup celery, diced
3/4 cup onion, diced
2 cups cremini mushrooms, quartered
2 tablespoons tomato paste
2 tablespoons reduced sodium soy sauce
1 tablespoon all-purpose flour
1 cup vegetable broth or water
1 1/2 teaspoons salt
3/4 teaspoon pepper
4 1/2 cups mashed potatoes (made from fresh potatoes or instant mashed potatoes)

Heat oven to 350®F. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add carrots, celery and onion; cook about 5 minutes or until tender, stirring occasionally. Remove from skillet. In the same skillet, heat remaining 1 tablespoon oil. Add mushrooms; cook about 5 minutes or until browned. Add vegetables and Smart Ground to skillet; stir in tomato paste, soy sauce and flour. Add broth, salt and pepper; bring to a boil, reduce heat and simmer 1 minute. Spoon Smart Ground mixture into 6 one-cup ramekins or ovenproof dishes. Spread mashed potatoes on top to cover completely. Bake about 30 minutes or until filling is bubbly and potatoes begin to brown.
