Smart Cutlets® Piperade
Serving Amount: 4 servings
Ingredients:
| 1/2 pkg (6oz) Smart Links® Breakfast, cut into 1/2-inch pieces | | 2 pkg (6oz) Smart Cutlets® Original | | 1 tablespoon olive oil, divided | | 2 cups onions, sliced | | 2 cups green bell pepper, sliced | | 2 cups red bell pepper, sliced | | 1 1/2 teaspoons garlic, minced | | 1 can (14.5oz) diced tomatoes, undrained | | 1 teaspoon smoked paprika | | 1 teaspoon salt | | 2 tablespoons parsley, chopped |
In a large skillet, heat 1 teaspoon oil over medium heat. Add Smart Links and cook about 5 minutes or until browned; remove.
In the same skillet, heat 1 teaspoon more oil. Add onions; cook about 5 minutes or until soft. Add bell peppers and garlic; cover and cook about 10 minutes or until peppers are slightly soft. Stir in tomatoes, Smart Links, paprika and salt. Cover and cook 10 minutes more.
In another skillet, heat remaining 1 teaspoon oil over medium heat and cook Smart Cutlets 2 minutes on each side. Reduce heat to low and cook 1-2 minutes longer. Place Smart Cutlets on a platter and spoon pepper mixture on top. Sprinkle with parsley.
