Smart Bacon® & Spinach Salad with Shallot Dressing

4 servings (1/4th recipe each)

Ingredients:


4 shallots
8 tablespoons olive oil
3 tablespoons natural rice vinegar
3 tablespoons granulated sugar
1-1/2 teaspoons salt
1 pkg (5 oz each) Lightlife® Smart Bacon®
10 ounces baby spinach leaves
1/2 cup dried cranberries
1 cup diced tomato
1/3 cup pistachios
1/3 cup crumbled Gorgonzola cheese
2 tablespoons vegetable Oil

Shallot Dressing Directions: Preheat oven to 450°F. Wash and peel skins off shallots. Drizzle two tablespoons of olive oil over shallots and then sprinkle salt over them. Place on sheet pan and cover pan with foil. Roast for 25-30 minutes. After removing from oven, allow shallots to cool, then chop into small pieces. Mix shallots with the remaining six tablespoons of olive oil, vinegar, and sugar or agave sweetener.

Salad Directions: While the shallots are roasting, fry the Smart Bacon® in a skillet with vegetable oil on medium-high heat for two to three minutes. Cool Smart Bacon and then chop. Mix with the other salad ingredients. Toss dressing and salad just before serving.
