Lemon Caper Cutlets

2 servings (1 cutlet each)

Ingredients:


1 pkg (6.0 oz each) Lightlife® Smart Cutlets® Original
2 tablespoons olive oil
1 jar (2 oz each) capers, drained
1/3 cup lemon juice
3/4 cup dry white wine (such as Pinot Blanc or Chardonnay)
1/2 cup vegetable broth
3 tablespoons garlic
1 egg
3 tablespoons all-purpose flour
1/3 cup panko bread crumbs

Put broth, lemon juice, capers, wine and garlic in a medium sauce pan. Put over medium heat for 10-15 minutes. In the meantime, heat olive oil in medium sauté pan over medium heat. Put a light coating of flour over each cutlet (both sides), then dip both sides in a thin layer of egg and lastly coat with bread crumbs. When oil is hot, add cutlets. After two minutes flip them and cook other side for another two minutes (or until golden brown). When cutlets are ready pour sauce over them and serve.
