Gumbo with Smart Sausages® Chorizo and Smart Deli® Ham

Ingredients:
| 1 pkg (12 oz) Smart Sausage® Chorizo Style, cut into 1/2-inch pieces | | 1 pkg (5.5 oz) Smart Deli® Ham, cut into medium dice | | 1/2 cup vegetable oil | | 1/3 cup all-purpose flour | | 1 onion, diced | | 1 green bell pepper, diced | | 2 celery stalks, cut into 1/4-inch slices | | 2 cups vegetable broth | | 2 cups frozen okra, sliced | | 1 can (14 oz) diced tomatoes | | 1 cup water | | 3 tablespoons garlic, minced | | 3 tablespoons Cajun spice | | 1 teaspoon salt | | 1 teaspoon dried thyme leaves | | 1/2 teaspoon black pepper | | 3 cups cooked rice | | Tabasco sauce, to taste (optional) |
In a large heavy-bottomed pot, stir together oil and flour until smooth. Cook over high heat for 10 minutes, stirring frequently, until mixture is a dark caramel color. Lower heat to medium and add onion, bell pepper and celery. Cook for 10 minutes, stirring frequently. Cool 5 minutes; add remaining ingredients, except rice. Bring to a simmer and cook, partially covered, 30-40 minutes or until mixture starts to thicken, stirring occasionally. Serve over rice.
