Grilled Veggie Skewers with Peanut Satay Sauce

Serving Amount: 4 servings (1 skewer with 1/4 cup sauce each)
Prep Time: 25 mins.
Ingredients:
| 1 package (12 oz) Lightlife® Farmer’s Market Veggie Burgers, cut into 3/4-inch pieces | | grilling spray | | 1/2 cup creamy peanut butter | | 1/4 cup coconut milk | | 1 Tbsp. firmly-packed light brown sugar | | 1 Tbsp. fresh lime juice | | 1 Tbsp. soy sauce | | 1 1/2 tsp. red chili paste | | 1/2 tsp. grated lime peel | | 3 Tbsp. hot water | | 2 Tbsp. chopped dry roasted peanuts | | 4 metal skewers |
Spray cold grate of outdoor grill with grilling spray. Prepare grill for medium heat. Meanwhile, place all sauce ingredients, except water and peanuts, in small food processor. Process 30 seconds or until smooth. While processor is mixing, slowly add water until a thin consistency is reached. Place sauce in small bowl and top with peanuts; set aside. Place burger pieces on skewers; grill 7-8 mins. or until hot, turning once. Serve skewers with peanut sauce.
