Gimme Lean® Moroccan Meatballs

|1 package (14 oz) Lightife® Gimme Lean® Sausage|
|1 can (14.5 oz) stewed tomatoes (no salt added), undrained|
|1 tsp. ground cumin|
|1/4 tsp. ground cinnamon|
|1/4 tsp. ground coriander|
|1 1/4 cups water|
|1 cup whole-wheat couscous, uncooked|
|1/3 cup cooked diced carrots|
|1/3 cup cooked corn kernels|
|1/3 cup cooked shelled peas|
|1/2 cup plain low-fat yogurt|
|1 tsp. garlic, finely chopped|
|1 tsp. chopped fresh mint leaves|
Form Gimme Lean® Sausage into 16 meatballs. In a medium skillet, combine meatballs, tomatoes, cumin, cinnamon and coriander. Simmer over medium heat, covered, for about 10 minutes.
While meatballs are cooking, bring water to a boil in a medium saucepan. Add couscous, carrots, corn and peas; cover and remove from heat. Let sit 5 minutes; fluff with a fork.
Whisk together yogurt, garlic and mint. Serve meatballs and sauce on top of couscous and drizzle with yogurt.
