Gimme Lean® Moroccan Meatballs
Serving Amount: 4 servings
Ingredients:
| 1 pkg (14oz) Gimme Lean® Sausage | | 1 can (14.5oz) unsalted stewed tomatoes, undrained | | 1 teaspoon ground cumin | | 1/4 teaspoon ground cinnamon | | 1/4 teaspoon ground coriander | | 1 1/4 cup water | | 1 cup whole wheat couscous | | 1/3 cup cooked carrots, diced | | 1/3 cup cooked corn kernels | | 1/3 cup cooked shelled peas | | 1/2 cup plain low-fat yogurt | | 1 teaspoon garlic, minced | | 1 teaspoon fresh mint, chopped |
Form Gimme Lean into 16 meatballs. In a medium skillet, combine meatballs, tomatoes, cumin, cinnamon and coriander. Simmer over medium heat, covered, for about 10 minutes.
While meatballs are cooking, bring water to a boil in a medium saucepan. Add couscous, carrots, corn and peas; cover and remove from heat. Let sit 5 minutes; fluff with a fork.
Whisk together yogurt, garlic and mint. Serve meatballs and sauce on top of couscous and drizzle with yogurt.
