Dirty Rice Skillet with Smart Sausage® and Smart Strips® Chick'n

|1 package (12 oz) Lightlife® Smart Sausages® Smoked Style, cut into 1/2-inch slices|
|1 package (6 oz) Lightife® Smart Strips® Chick'n|
|2 Tbsp. vegetable oil, divided|
|1 cup chopped celery|
|1 cup chopped green bell pepper|
|1 cup chopped yellow onion|
|2 tsp. Cajun seasoning|
|1 tsp. finely chopped garlic|
|2 cups brown rice, uncooked|
|2 1/2 cups vegetable broth|
|1 can (14.5 oz) diced tomatoes, undrained|
|1/2 cup chopped green onions|
In a large skillet, heat 1 tablespoon of oil over medium heat. Add Smart Sausage® and cook about 5 minutes or until browned; remove.
In the same skillet, heat remaining 1 tablespoon of oil. Add celery, bell pepper, onion, Cajun seasoning and garlic. Cook about 5 minutes or until vegetables are soft. Add rice; cook and stir about 1 minute.
Add broth, tomatoes, Smart Sausage® and Smart Strips® Chick'n. Bring to a simmer and cook, covered, over low heat about 45 minutes or until liquid is absorbed. Just before serving, stir in green onions.
