Dirty Rice Skillet with Smart Sausage® and Smart Strips® Chick'n
Serving Amount: 6 servings
Ingredients:
| 1 pkg (12oz) Smart Sausage® Smoked Style, cut into 1/2-inch slices | | 1 pkg (6oz) Smart Strips® Chickn | | 2 tablespoons vegetable oil, divided | | 1 cup celery, chopped | | 1 cup green bell pepper, chopped | | 1 cup onion, chopped | | 2 teaspoons Cajun spice | | 1 teaspoon garlic, minced | | 2 cups long-grain brown rice, uncooked | | 2 1/2 cups vegetable broth | | 1 can (14.5 oz) diced tomatoes, undrained | | 1/2 cup scallions, chopped |
In a large skillet, heat 1 tablespoon oil over medium heat. Add Smart Sausage and cook about 5 minutes or until browned; remove.
In the same skillet, heat remaining 1 tablespoon oil. Add celery, bell pepper, onion, Cajun spice and garlic. Cook about 5 minutes or until vegetables are soft. Add rice; cook and stir about 1 minute.
Add broth, tomatoes, Smart Sausage and Smart Strips. Bring to a simmer and cook, covered, over low heat about 45 minutes or until liquid is absorbed. Just before serving, stir in scallions.
