Linguini with Smart Strips® and Artichokes

|1 package (6 oz) Lightlife® Smart Strips® Chick'n|
|8 ounces linguini pasta|
|2 Tbsp. extra virgin olive oil|
|2 jars (6.5 oz each) marinated artichoke hearts, drained|
|1/3 cup sliced Greek-style green and black olives|
|1/4 cup extra virgin olive oil|
|3 Tbsp. freshly-squeezed lemon juice|
|1 tsp. freshly-grated lemon zest|
|1/4 tsp. salt|
|1/8 tsp. freshly cracked pepper|
|freshly shredded Parmesan cheese (if desired)|
|foccacia bread (if desired)|
In Dutch oven bring 4 to 6 quarts of water to a boil. Add linguini pasta to the boiling water; stir gently. Return to a boil. For "al dente" pasta, boil uncovered, stirring occasionally, for 9 minutes. Remove from heat; drain well. Keep warm.
In 10-inch nonstick skillet place 2 tablespoons of olive oil. Add Smart Strips® Chick'n. Cook over medium heat, stirring occasionally, until lightly browned (2-3 mins.). Remove from pan.
In large mixing bowl place warm linguini; add cooked Smart Strips® Chick'n and all remaining ingredients. Mix well.
Sprinkle top with Parmesan cheese and serve with warm focaccia, if desired. Refrigerate leftovers.
