Linguini with Smart Strips and Artichokes

Ingredients:
| 1 pkg Smart Strips® Chick'n | | 8 oz linguini pasta | | 2 Tbsp extra virgin olive oil | | 2 (6-ounce) jars marinated artichoke hearts, drained | | 1/3 c sliced Greek-style green and black olives | | 1/4 c extra virgin olive oil | | 3 Tbsp freshly squeezed lemon juice | | 1 tsp freshly grated lemon zest | | 1/4 tsp salt | | 1/8 tsp freshly cracked pepper | | freshly shredded Parmesan cheese, if desired | | Foccacia bread, if desired |
In Dutch oven bring 4 to 6 quarts water to a boil. Add linguine pasta to the boiling water; stir gently. Return to a boil. For ???al dente??? pasta, boil uncovered, stirring occasionally, for 9 minutes. Remove from heat; drain well. Keep warm.
In 10-inch non-stick skillet place 2 tablespoons olive oil. Add Smart Strips. Cook over medium heat, stirring occasionally, until lightly browned (2 to 3 minutes). Remove from pan.
In large mixing bowl place warm linguine. Add cooked Smart Strips and all remaining ingredients. Mix well.
Sprinkle top with Parmesan cheese and serve with warm foccacia if desired.
Refrigerate leftovers.
