Black Beans with Smart Bacon®

4 servings (1/4th recipe each)

Ingredients:


1 can (15 oz each) black beans, undrained
2 tablespoons olive oil
2 tablespoons minced garlic
1 pkg (5 oz each) Lightlife® Smart Bacon® (chopped to a medium dice)
1/8 teaspoon salt

Heat olive oil in large sauté pan over medium heat for approximately 2 minutes, or until hot. When oil is hot, add garlic and Smart Bacon®. Sauté over medium heat for approximately 5 minutes, stirring frequently. Stir in can of black beans (do not drain). Continue stirring every couple of minutes to work in the flavor of the Smart Bacon® and garlic. After five minutes, reduce heat to a simmer. Allow mixture to simmer for an additional 10 minutes, stirring as needed. Add salt and serve.
